Three varieties across a six-month window. Zebda is the Egyptian favourite — dense, sweet, low fibre. Keitt is the large late variety that holds condition well, which makes it the usual choice for longer routes. Naomi sits between them and colours attractively, which retail buyers notice.

This is the whole difficulty with shipping mango. A mango picked ripe is a mango that arrives as pulp. A mango picked too early never develops properly and reaches the buyer hard, green inside and flavourless — and unlike a banana it will not fully recover.
So the fruit has to be taken at full physiological maturity while still firm, and then allowed to ripen through the transit. Codex CXS 184, the standard for mangoes puts the same idea in standards language: the fruit must be sufficiently developed to continue ripening to the maturity characteristic of its variety, and skin colour is a poor guide because it shifts by variety.
In practice that means the harvest decision is made by people who know these specific trees, and that the right variety for you depends on how long the fruit will be travelling.
Mango goes in 5 kg cartons rather than the heavier boxes used for citrus, because the fruit is soft-skinned and will not carry the weight of a deep stack. A 40ft reefer takes about 21,000 kg on that format.
