Buyers judge frozen cauliflower on colour before anything else, and they are right to — but they often assume whiteness is a property of the variety. It is not. A cauliflower curd turns cream, yellow or pink when it is exposed, mishandled or over-processed, and every one of those things happens before the tunnel.
So the white in a carton of frozen cauliflower is a record of how the crop was grown and how quickly it was handled. It is one of the few products where the finished appearance tells you something true about the whole chain behind it.
The first is agricultural. A curd left exposed to sun develops colour, which is why growers shade the head as it matures. Fix that in the field or you never fix it at all.
The second is in processing. Cauliflower held too long between cutting and blanching begins to discolour at the cut surfaces, and cauliflower over-blanched goes grey and soft. Neither can be corrected downstream, and neither shows up in a specification — which is why it is worth asking a supplier how long their cut-to-blanch window is rather than only asking what grade they pack.
Florets come at 20 to 40 mm and 40 to 60 mm. The smaller band goes into mixes and prepared meals; the larger is a plated vegetable. Cauliflower rice is available on request and has become a substantial line in its own right, and stem dice make use of a part of the plant that would otherwise be waste — which is worth asking about if your product does not need whole florets.
Colour and stem-length tolerance are both to your specification. Write them down; they are the two things most often left implicit and most often argued about.
Held and shipped at −18 °C in reefer containers with the temperature logged from cold store to port. FOB and CIF, loading from Damietta, Alexandria, Port Said or Ain Sokhna.
Transit runs two to four days to the Gulf by truck, three to twenty-seven days into Europe depending on destination, and up to a month to the United States. Certificates are issued as production closes rather than after loading, so the papers reach you before the container does.
