Broccoli is bought on floret diameter, and the two bands do different jobs. Florets at 20 to 40 mm disperse through a mix and cook evenly with everything around them. At 40 to 60 mm the floret is a vegetable in its own right on a plate, and it needs to look like one.
Get the band wrong and the product is not defective, it is simply unusable for what you bought it for — large florets in a stir-fry mix cook unevenly, small ones on a plate look like offcuts. It is the most common avoidable mistake on this line, and it is fixed by writing the number down.
Broccoli that has been frozen badly is not usually soft. It is the wrong colour — a drab olive instead of green — and that happens for one of two reasons, both before the tunnel.
Either the broccoli was not blanched properly, in which case enzymes keep working slowly at freezer temperature and degrade the chlorophyll over months; or it was blanched too long, in which case the damage was done in the water before it ever froze. The window between those two failures is narrow, and hitting it consistently is most of the skill in a frozen vegetable line.
Colour tolerance belongs in your specification alongside the calibre. So does residue: for European consignments the limits in the EU pesticide MRL database are what our farm programmes are managed against.
Almost every broccoli specification names a floret diameter and stops. Stem length is left to the supplier, and stem is cheaper than head — so a carton can meet its calibre spec exactly and still be disappointing, because a third of what you bought is stalk.
