Two forms, and the choice is usually made downstream rather than at the point of buying. Whole beans at 70 to 90 mm are a plated vegetable — they need to look like beans on the plate, so length consistency and colour matter more than anything. Cut beans at 20 to 40 mm are an ingredient, going into mixes, ready meals and soups where nobody will measure them but everybody will notice if they are mushy.

Every bean has to have both ends removed before it is blanched, and there is no way to do that which is both fast and gentle. Mechanical topping is quicker and takes more of the bean with it. Careful work loses less and costs more in labour. Either way the buyer pays for it — the only question is whether it shows up in the price or in the yield.
It is worth asking a supplier which they do, because it explains a price gap that otherwise looks like a quality gap.
