Two varieties. Wonderful is the international benchmark — deep red arils, high juice, the variety most export programmes are written around. Variety 116 is the Egyptian selection, early and well coloured, and it opens the window before Wonderful is ready.

Pomegranate is the one crop on our list where the exterior tells you least. A husk can look dull and hold perfect arils; it can look flawless and hold pale, dry ones. Colour, juice content and aril development are decided by variety, by how long the fruit stayed on the tree, and by the growing season — none of which the outside of the fruit reports honestly.
That has two practical consequences. Specify the variety, because variety is the most reliable predictor you have. And take samples that are cut open rather than photographed, because a photograph of a pomegranate is a photograph of a husk. Residue screening runs against the destination's limits — for Europe, the EU pesticide MRL database.
